Elon's Notes: I was lucky enough to be able to visit Jim Beam for the first time back in March. The barrels selected for me were all over 9 years old and one as old as 11. It was a 10 year old barrel which clocked in at 127 proof that I selected. All of the samples were special but my favorite smelled like real Vermont Maple syrup. The difference here not just sweet maple-y goodness but also that earthy complexity that yields an incredibly rich and decadent dram worthy of summer celebrations. This bottling is not for the faint of heart, even though it is proofed to a wimpy 120 proof. Please handle with care.

Elon's Notes: Wheated Bourbon fans will rejoice when sniffing this powerful gem. Mostly sweet dessert aromas up front like orange dipped in caramel, followed by a big pot of cooked red raspberry and strawberry, and cinnamon laced whipped cream to back it up. A soft supple entry and you have to argue with the proof stated on the bottle because it goes down much smoother. A new classic not to be missed in the collection!

About the Producer: The Wilderness Trail distillery is only 10 years old, but what it lacks in legacy it makes up for in innovation. The founders Shane Baker and Dr. Pat Heist are fermentation experts who have over 20 years experience in alcohol production and a science-minded approach to whiskey distilling. Their techniques include culturing bacteria or wild yeast, isolating organisms, and cryogenically freezing organisms. Some of our favorite whisky producers have been using their techniques and yeasts! This product is 100% distilled and aged at the distillery.
